Herbed Leg Of Lamb |
Ingredients for 4-6 servings:
- Leg of lamb weighing approx.1kg
- Slice of lard (animal fat) approx. 50g
- Small bunch of aromatic herbs (sage, rosemary, garden savoury, bay leaf)
- 1 onion
- 1 clove garlic
- salt
- pepper
- extra vergin olive oil
- hot chili pepper
Method:
Finely chop half of the herbs together with the clove of garlic. Bone the leg of lamb (phase 1) and lightly sprinkle with salt and pepper (phase2) and with the chopped herbs (phase 3). Place the slice of lard inside the leg of lamb (phase 4), as well as a pinch of hot chili, a twig of rosemary and garden savoury (phase 5). Roll up the leg of lamb and tie with string (phase 6). Grease a small oven tray with extra vergin olive oil (phase 7), add chopped onion to tray (phase 8) and place leg of lamb on tray (phase 9). Sprinkle with oil and salt and place in oven (phase10). When cooked (approx. 1 hour) (phase 11), remove leg of lamb from oven and slice (phase 12). Pour pan juices over the slices and serve hot.
